Saigne 2022
Saignée, or to bleed, is the method of collecting and saving the juice immediately after we press red grapes for the purpose to make our red wines bigger and bolder. By utilizing the juice from the same grapes which produce our favorite red wines, fermenting as if a white wine - slow and cold - we are creating a bigger, bolder rosé with pronounced bright fruits and florals. The 2022 Saigné is a blend of Counoise, Merlot, Tempranillo, Mourvedre, Barbera, and Syrah creating a mosaic of a rosé with a bright floral nose, citrus blossom and strawberry on the palate.
Aromatics: Candied watermelon, strawberry, citrus blossom, and white pepper
On the Palate: White pine berry, strawberries, candied watermelon, Meyer Lemon peel, white pepper with a hint of coriander and slight meatiness like prosciutto.
Enjoy now. Serve chilled, 48-58ºF.
